Watermelon Waffles:
Oh, summer…. A time for mothers to spend quality time with their kids after a long school year of separation. You’re going to have so much fun going to parks, baking, doing arts and crafts…. You know, Pinterest stuff! Well, at least that is what June is like.
July and August on the other hand, are a 100% different story. The heat has arrived, the kids are at each others throats, and they are living off of the 10 boxes of frozen corn dogs you got at Costco for $5.99 each. And frankly? You. Don’t. Give. A. Damn.
Fast forward, and it is officially July 6th, and I had an epiphany. I am going to try to do something cute and memorable with my younger siblings after June 30th. *GASP*
So, naturally, I became the world’s meanest person when tablets were taken away (they almost died), and they were forced out of bed at the crack of dawn (11:00am).
We were going to make some adorable Watermelon Waffles from scratch with chocolate chips! I would have been thrilled as a kid and ask to help, but no…. We groaned because “homemade takes too long, why can’t we use a mix?” I bit my tongue and forced a smile and told them it would be fun, and that homemade tasted better, and they reluctantly agreed.
–Halfway through making the batter, I just about lost my shit when they asked for a corn dog.–
But, eventually, we were able to pull some piping hot waffles off the iron, and served them up all cute. I was honestly so proud of myself when they turned out so good. I devoured several pieces thinking I was the best sister/mom in the world, then I turned around.
They had taken a few bites, pushed it around, let it get cold, and were eating a soggy, microwaved corn dog 20 minutes later.

Watermelon Waffles:
Makes 4 full waffles
Ingredients:
- 2 Eggs
- 1 ¾ C. Milk
- 1 Tbs. Sugar
- 1 Tbs. Baking Powder
- ½ tsp. Salt
- ½ Oil
- 2 C. Flour
- 1 Handful Chocolate Chips
- Red and Green Food Dye
Directions:
- In a medium mixing bowl, whisk together the eggs and milk.
- Add in the sugar, baking powder, salt, and oil- mix until well combined and there are no lumps.
- Whisk in the flour just until combined, do not overmix!
- Take 1 ½ cups of the waffle batter and place into a separate bowl.
- Add several drops of green food coloring to the small bowl of batter.
- In the large bowl, add in several drops of red food coloring, and a handful of chocolate chips.
- Grease a hot waffle iron (if yours requires it), and add a large scoop of the red waffle mix to the center.
- Use a small spoon to ladle a thin layer of green batter around the edge.
- Sprinkle in a few more chocolate chips if desired, and cook to your preference.
- Serve warm with syrup, whipped cream, or just by themselves. Enjoy!
