Vegan Chocolate Pound Cake Recipe

Having a child has changed my body and life more than I could have ever imagined. From trying to lose the baby weight, to finding the diet that works best for me and my baby while breastfeeding, it has been an absolute roller coaster! I always assumed I would be the exception (just like everyone else in the world does). But, when the baby weight didn’t start melting off, and my little one was in pain all the time from gas, I knew I had to make a lifestyle change. After doing a bit of my own research, I decided to try cutting all dairy out of my diet.
Man, you never realize how much dairy you can consume until you decide to leave it out of your life completely! Since baking and food is a large part of my life, it was going to be difficult to come up with recipes that would stick with my new lifestyle. Ever since making the change and cutting out dairy, my little one has been so much happier! While it has been hard at times, I don’t think I could ever go back! I have been able to come up with some pretty fun recipes too, my favorite being a chocolate pound cake that is also vegan friendly. Without one bit of butter, milk, or an egg in sight, this cake is surprisingly moist and spongy with a rich dark chocolate flavor. I like to top it with a thin icing glaze, and then proceed to eat the entire cake myself, but that’s just me. 😉

Vegan Chocolate Pound Cake
The Ingredients:
- 1 1/2 C. Flour
- 3/4 C. Sugar
- 3/4 C. Cocoa Powder
- 4 tsp. Baking Powder
- 1 3/4 C. So Delicious Dairy Free Almond Milk
- 3 Tbs. Coconut Oil, Melted
- 1 tsp. Vanilla Extract
The Directions:
- Preheat your oven to 325 degrees F.
- In a large mixing bowl, whisk together the So Delicious Dairy Free Almondmilk, coconut oil, and vanilla extract.
- Add in the sugar, cocoa powder, and baking powder- whisk until well combined.
- Fold in the flour just until combined- do not over mix.
- Coat a pan of your choice with melted coconut oil, and spread in the batter evenly.
- Bake in the oven for 35-40 minutes. Poke with a knife or toothpick to test if it is baked through the center.
- Remove the bake onto a cooling rack, and set aside to cool completely.
- Top with powdered sugar or a thin glaze made with 1 C. Powdered Sugar and 3 Tbs. So Delicious Dairy Free Almondmilk.
- Slice and enjoy!
