Mermaid Lemon Drop Recipe

Well, I’m finally hopping on the mermaid trend (only a few years late), and I’d have to say this mermaid lemon drop is absolutely perfect for the theme. Not only are these drinks super simple to make, but they are perfect for these awful heat waves we are experiencing in the Pacific Northwest right now.
I just got back from the Mom 2.0 conference in Pasadena, CA and I swear I had brought Oregon weather with me. Is was cool, cloudy, and drizzly the whole time- and I loved it! Returning home, I bundled my little one up on the plane and braced myself for the chill of our “spring,” but was met with an unexpected wall of humidity and 85 degree weather, and I HATE it! I am the first to admit that I am the biggest baby when it comes to weather. I’ll complain when it’s hot, I’ll complain when it’s cold, there is truly only a 10 degree window where I am comfortable. 😉
But, with all the frozen treats and cool cocktails, I am confident I will survive and make it through the heat. Maybe. Check out the full recipe for these mermaid lemon drops below!
The Ingredients:
Mermaid Lemon Drop:
- 1 C. Simple Syrup (recipe below)
- 1 C. Lemon Juice
- 1 C. Vodka
- 2oz Midori
- 2oz Blue Curacao
Simple Syrup:
- 1 C. Cold Water
- 1 C. Sugar
The Directions:
- Bring water to a low boil and add in sugar.
- Remove from heat immediately and stir until sugar is completely dissolved.
- Set aside to cool to room temperature and thicken before use.
- Fill four glasses halfway with crushed ice and pour ½ oz of Blue Curacao on top of each.
- Slowly layer ½ oz of Midori on top of the Blue Curacao and set aside.
- In a large shaker filled with ice, add your simple syrup, lemon juice, and vodka. Shake until chilled all the way through.
- Very slowly pour into your glasses to create a layered effect.
- Enjoy right away!
