Keto Strawberry Cheesecake Cookies

Will you be on KETO during Valentine’s Day? Well, then these KETO Strawberry Cheesecake Cookies are a must have for your romantic night! While you may be skipping the chocolates and champagne, you can nibble on these sweet and flavorful KETO Strawberry Cheesecake Cookies without any guilt!
I successfully stayed on the KETO diet throughout all of January, and it was one of the hardest things I have done! After week 2, things definitely got easier as I fell into a routine. But I was getting tired of eating the same things everyday… Eggs, Bacon, Coconut Oil, Lettuce…. It got really boring, really fast. And it wasn’t hitting my cravings for something sweet. So, working with the few ingredients I could, I created these KETO Strawberry Cheesecake Cookies! With just a touch of fruit, cream cheese, your preferred sweetener, and notes of vanilla, these slowly cured my cravings!
While these are KETO friendly, you do need to be careful not to eat too many as they do still have some carbs from the almond flour and strawberries.

KETO Strawberry Cheesecake Cookies Recipe
Ingredients:
- 1/2 cup chopped fresh strawberries
- 2 teaspoons. fresh lemon juice
- 1 cup softened butter
- 1/2 cup keto friendly sugar substitute (I used Stevia or Monkfruit Sugar)
- 2 teaspoons cream cheese, softened
- 1 egg white
- 1 teaspoon pure vanilla extract
- 1 1/2 cup coconut or almond flour
Instructions:
- Preheat oven to 350
- Toss strawberries in lemon juice and drain after 1-2 minutes. Allow to dry. Once dry, toss in a few teaspoons of flour. Set aside.
- In a medium size mixing bowl, add the butter and sweetener. Cream together for about 1 minute.
- Add in the cream cheese, egg and vanilla and mix well. About 1 minute.
- Fold in flour until mixture forms a dough like consistency.
- Gently fold strawberries into mixture.
- Using an ice cream scoop, place balls of dough on cookie sheet. Bake for 9-11 minutes.
- Allow cookies to cool and store in an airtight container.
