Never let today inspire tomorrow. With any diet plan, you want to focus on one day at a time. If you mess up, it doesn’t matter. All that matters is the day you’re living. Don’t let a bad Monday ruin your entire week. Get up and start fresh each day.

KETO Ginger Cookies:
Ingredients:
- 2 C. Almond Flour
- 3/4 C. Monkfruit Sugar
- 1/2 C. Butter, softened
- 2 Eggs
- 2 tsp. Vanilla Extract
- 1 tsp. Salt
- 2 tsp. Ginger
- 1 tsp. Cinnamon
- 1/2 tsp. Cloves
- 1/2 tsp. Nutmeg
- 95% Cacao chocolate or sugar free chocolate chips, melted
Directions:
- Preheat the oven to 375.
- Cream together the butte rand monkfruit sugar until light and fluffy. Add in the eggs and beat well.
- Add inyour salt, spices, and vanilla extract, and continue to cream until there ae no lumps of the spices left.
- Slowly stir in the almond flour 1/2 cup at a time. If you can’t get it all combined, that is okay.
- Drop by rounded tablespoons onto parchment paper, and use the back of a spatula to flatten the cookies. Spray the back of the spatula with an oil of your choice, if needed.
- Bake for 10-12 minutes, or until the edges are golden.
- Let cool completely, and drizzle with chocolate if desired.
