Irish Cheddar Mac and Cheese With Instant Pot Corned Beef

A few weeks ago, I shared my story about wanting to live a healthier and more pure lifestyle, and that all began with a trip to Whole Foods Market 365. I was able to purchase so much fresh produce, meats, seafood, dairy and more for a lower cost and higher standard than most grocers. In my last trip, I definitely splurged and purchased two of everything in the store! Okay, maybe I’m exaggerating a bit, but I was able to treat my family to many things we haven’t before due to the cost being too high, or not agreeing with the ingredients. But with Whole Foods Market 365, there aren’t any artificial preservatives, colors, flavors, sweeteners, or hydrogenated fats in any of the items they carry.

And along with a jumbo set of lavender shampoo/conditioner and a cloud-like sweet loaf, I picked up my FAVORITE springtime food item: corned beef! I absolutely love the taste and order it almost anytime it is available in a restaurant, but I have never quite been able to replicate it at home- it is always too tough and stringy. So, I am certainly glad this instant pot trend has taken off, because my first thought was to just pop it in there. I am not sure if it was the way I was cooking it, or just the cuts of meat I’ve gotten in years past, but purchasing it from Whole Foods Market 365 and using the instant pot made it my best batch yet! It wasn’t too salty, and it absolutely melted in our mouths.
I usually prepare corned beef with sauteed cabbage, but the members in my family have started to get an opinion about what I cook and voice it. So I also picked up a few blocks of Dubliner Irish Cheddar and pasta to make a deliciously creamy mac and cheese to go underneath.
I absolutely love homemade mac and cheese, and with only five ingredients, it is so easy to whip together in a matter of minutes. Check out how to make this dish below- perfect for St. Patrick’s Day on March 17th!
Irish Cheddar Mac and Cheese With Instant Pot Corned Beef
The Ingredients:
- Whole Foods Market 365 Wellshire Uncured Corned Beef
- 1 Box Pasta
- 2 Tbs. Butter
- 1/4 C Flour
- 1 1/2 C Milk
- 2, 7oz Dubliner Irish Cheddar Cheese, broken into pieces
- 1 C Mild White Cheddar
The Directions:
- Place your corned beef in an instant pot, making sure to include all of the seasonings, and fill just to the top of the beef with water.
- Set your beef on TWO ROUNDS of cooking on the meat setting (2 hours total).
- Once your beef is finished cooking, pull out of the instant pot and place on a cutting board to rest.
- Meanwhile, start boiling your pasta to the directions on the box.
- In a medium pan, start melting the butter over medium high heat.
- Once the butter is melted, whisk in the flour, and very quickly add a splash of milk.
- Once the mixture starts to thicken, gradually add more milk.
- Once all of the milk is added, bring to a slight simmer while stirring constantly.
- Then, add in the good stuff! Place about half of each cheese in the pan, and stir until melted, then add in the rest.
- Once the cheese is well incorporated, pour over your drained pasta, and serve immediately topped with sliced corned beef.
