Instant Pot Rainbow Carrot Baby Food Recipe
Call me crazy, but I absolutely couldn’t wait until my little guy was old enough to eat solids so I could make homemade baby food for him. We are only a month in, so there is definitely time for it to lose its appeal, but for now I love it.
So, when we received the go ahead from his pediatrician to start feeding solids earlier than most babies to up his weight a bit quicker, I was so excited!
And surprisingly, he PREFERS his veggies over fruits (great, I have a weird kid). But this will make it much easier in the future to make sure he has a good spread in his diet. Pediatricians and dietitians suggest making sure to introduce your little ones to less sweet/salty foods from the beginning to get them used to healthy varieties of foods like this carrot baby food.
At first I was doing the whole steaming/cooling/mashing/sterilizing shebang, but that was starting to be a lot of work to make new food every few days. So, I invested in a Baby Bullet System and started putting all of his baby foods through the Instant Pot , and it has changed everything!
Using an instant pot has made everything so much easier and healthier- instead if boiling out all the nutrients, everything stays inside the food, and I can use any of the excess water to thin out his food. But you can just as easily prepare the carrots in a pot on the stove, or even in the microwave.

The Ingredients:
- 2 C. Sliced Rainbow Carrots, peeled
- ⅓ C. Cold Water
The Directions:
- Peel all of your rainbow carrots, and cut out any knots or bad parts.
- Slice them into 3 inch pieces about as thick as your pinky finger.
- Place the carrots and water into your instant pot, and close the lid tightly.
- Set your instant pot to the soup setting for 15-20 minutes.
- Once the soup cycle is complete, let all of the steam out before opening.
- Take out your carrots, and reserve the water left inside.
- Run the carrots under cold water or place in the refrigerator until they are cool.
- Add your carrots to a food processor or a Baby Bullet and run until the carrots are smooth. Add in the reserved water until you get the consistency you desire.
- Keep in an airtight container in the refrigerator for up to four days.
TIP: Add in a tablespoon or two of your little one’s favorite cereal while blending for a little more substance to their meal!
