Dry Ingredients:
2 cups quick rolled oats
2 cups freeze dried strawberries
1 cup shredded coconut
1 cup orange flavored cranberries
½ cup chopped macadamia nuts
Wet Ingredients:
2 tbs. Coconut oil
½ cup granulated sugar 1/4 cup honey
A few drops of Orange extract (or any extract you desire)
Mix all of the dry ingredients in a large mixing bowl until well blended.
On medium high heat, melt the coconut oil. As soon as the oil is warm, add the granulated sugar. Once sugar and oil is blended, add in the honey. Stir continuously until the mixture comes to a boil (watch carefully, the mixture will overflow quickly). As soon as it starts boiling rapidly and foaming, pour over the dry mixture and mix well.
While your granola sits to cool enough to handle, spray a glass pan with cooking spray. Spread the granola into the pan and press down firmly with greased hands to even out your bars. Refrigerate until you are ready to serve, and slice them up!
If you want a different spin on this recipe, freeze the granola thinly and then crumble up to create a yummy granola for yogurt, oatmeal, or anything else
