Groundhog Day Brownie Bites

I never, ever, in a million years understood Groundhog Day as a child. But now that I’m an adult? Nope- I STILL don’t understand it. I mean, we take a groundhog, hold it up, and we look for it’s shadow to determine if we have more winter? It makes no sense!
First, you would think that if it saw it’s shadow, that would mean sun and warmth- which obviously means spring is on it’s way. But it is actually the other way around. So I came up with my own conclusion: people are weird, and winter just lasts forever.
Even though I still very much believe that, I still make sure to check in to see if the groundhog saw it’s shadow every year. Whether folks believe it or not, it is a fun, silly tradition to keep going. 😉

Groundhog Brownie Bites
Ingredients:
- 1 (18.3 ounce) package brownie mix, plus ingredients to make brownies
- 1 cup green frosting, your favorite
- Graham teddy bear cookies
- Brown jimmies
Instructions:
- Preheat oven to 350 degrees. Prepare mini muffin pan with mini cupcake liners and spritz with non-stick cooking spray.
- Mix brownie batter according to package directions. Using a small scoop, pour approximately 1 tablespoon of batter into each mini muffin cup. Bake for 10 to 12 minutes or until a toothpick inserted in the center comes out with moist crumbs attached. Cool brownie bites completely.
- Pipe green frosting on each brownie bite. Slide a graham teddy bear into the icing. Sprinkle jimmies around the cookies.
