On-The-Go Everything Pancakes

When your kids are still on their summer sleep cycle they clearly need their extra 10 minutes of beauty sleep! It is a challenge waking them up when they don’t want to, so I give them some extra time by making on-the-go everything pancakes with everything in it. This way they can eat in the car without making a mess! Made with scrambled eggs, sausage and even the maple syrup, these have all the flavor of a sit down breakfast. If you need your extra 10 minutes of beauty sleep as well, make these pancakes ahead of time, freeze them and then you can either microwave or toast them and they taste just the same as if you were to have made it that morning. These on-the-go pancakes carry all the nutrition that every child needs on an every day basis to get through the day.
The Ingredients Are:
- 1 batch of your favorite pancake batter
- 4 eggs, scrambled
- 1 cup sausage cubed and fried
- ¼ cup maple syrup
The Directions Are:
- Add the sausage and eggs to the prepared pancake batter, and gently mix.
- Drizzle in the maple syrup and stir slightly- just until combined.
- Cook on a pancake griddle or in a greased frying pan over medium heat, flipping once.
- Serve immediately, or let cool and store in freezer containers for later.
- When heating after being frozen, pop in the microwave or toaster and enjoy!
