Garlic And Sage Big Kid Grilled Cheese Sandwiches

This sandwich has 3 of my favorite things. Garlic. Sage. And CHEESE! I mean, who wouldn’t fall in love with this big kid grilled cheese?! The first time I made this was earlier this month after finally finishing my taxes at about 11:45pm on the deadline- my mom and I had been working on them together all day long and hadn’t eaten a thing except for a bag of chips, chocolate, and maybe just a few sips of cinnamon whiskey (probably not a good idea now that I’m thinking about it) ;).
But after a few good cries, even more curse words, and a big cheer when we were finished, we realized we were starving! And of course, our cabinets and fridge is practically bare. After looking around and a quick stop by Walmart, we were able to piece together a can of Ricos Queso Blanco Cheese, a few other kinds of cheese, half a chicken breast, and a few slices of bread, and miraculously created the most amazing grilled cheese. Garlic And Sage Big Kid Grilled Cheese: 4 Sandwiches
The Ingredients:
- 1 Raw Chicken Breast, thinly sliced
- 4oz Cream Cheese
- 1/2 Can Ricos Queso Blanco Cheese
- 1 C. Cheese of your choice, shredded
- 1 Tbs. Garlic
- 1 Tbs. Fresh Sage, finely chopped
- Salt/Pepper
- 2 Tbs. Butter (optional)
- 8 Slices Bread
The Directions:
- Fill a small frying pan halfway with water, and bring to a simmer over medium/high heat. Add in your chicken and salt/pepper both sides. Cook until no longer pink in the middle.
- While your chicken is cooking, add the cream cheese, Ricos Cheese, garlic, and sage to a mixing bowl and beat until combined well and fluffy.
- Spread a thin layer of butter onto one side of each piece of bread, and spread a thick layer of the cheese mixture onto the other.
- Place two slices of bread butter side down onto a frying pan over medium heat.
- Add a piece or two of chicken on top of the cheese mixture, and sprinkle your shredded cheese on top.
- Cover and cook until the bottom of the bread is golden brown and the cheese is starting to melt.
- Place the other slice of bread on top of each sandwich and flip, cooking until the other side is golden brown. Serve hot, and enjoy!
