Crustless BBQ Pork Sandwiches

The school year has officially started! While I have yet to send my own children off to school, I am helping out with my cousins again this year. And somehow, I’ve forgotten how time consuming it is to pack lunches. 😴
That’s why I am making some simple Crustless BBQ Pork Sandwiches that are not only quick to make, but freeze perfectly. That’s right, no more scrambling in the morning trying to figure out what to throw in the lunchbox. And when I pull from the freezer, they keep their lunches cold all day, and are perfectly thawed by lunchtime!
My favorite part about these sandwiches, is that we made them on King’s Hawaiian Bread. The savory, sweet flavor is simply addicting! And the unique flavor allows it to be used in a variety of recipes, ranging from sweet to savory, and everything in between. Confession: I would keep a package of King’s Hawaiian Dinner Rolls in the house at all times when I was pregnant. Each time I got up in the middle of the night, I would secretly scarf one down, haha!
I think King’s Hawaiian products and BBQ pork or chicken go together incredibly. Add in a pickled coleslaw, and I am in heaven!
I chose to make these BBQ pork sandwiches crustless, because the kids are suuuuuper picky when it comes to their food. BUT, I saved the crusts, and serve them for breakfast with an egg fried in the middle. A great way to use the scraps, and the kids didn’t even notice!

Crustless BBQ Pork Sandwiches
Ingredients:
- King’s Hawaiian Bread
- Pulled Pork
- BBQ Sauce
- Cheese, optional
Directions:
- Mix together your pulled pork with your desired amount of BBQ sauce.
- Use a cup or cookie cutter to cut out circles in the middle of each slice of bread.
- Place a heaping tablespoon of the BBQ pork in the middle of half of the bread circles.
- lightly wet the edges of the other bread circles with a bit of water, and place over the pulled pork halves.
- Use a fork, and gently press the edges together until they are sealed well.
- Enjoy immediately, or place in a single row in the freezer until frozen all the way through, then place in freezer bags!
