Caprese Pasta Salad With Creamy Balsamic Dressing

In our house, there isn’t really one season that is much busier than the other. Our days and schedules are jam packed year round- whether it is with sports, recitals, holidays, or anything else. That is why we try to always have ingredients for quick and easy meals on hand. At all times, we will either have a large container of a ready-to-go meal in the fridge or a pot of soup simmering on the stove for those crazy days when we have 5 minuted to swing by home to change, eat, and be out the door for whatever is next. Our family favorite dish to keep in the fridge is definitely a Caprese Pasta Salad with a Creamy Balsamic Dressing. It holds extremely well in the fridge, though I’ve never seen a batch last more than a couple days!
I have recently started adding McCormick’s NEW Sundried Tomato Basil Pasta Seasoning that I picked up from Walmart into the dressing, and the family loves it more than ever! It helps bring out the sweetness of the dish, and adds a deeper flavor. And since there are no artificial flavors or colors, these blends are perfect for my family. One of my children actually has an allergy to artificial colors- particularly Red40. It can be so difficult to find seasonings without it, so this is a winner for sure!

The Ingredients:
- 1 Box Bowtie Pasta
- A Few Handfuls Spinach
- 2 Roma Tomatoes, diced
- 1/2 cup Mayonnaise
- 1/2 cup Balsamic Salad Dressing
- 1/4 cup Balsamic Vinegar
- 2 Tbs. McCormick Sundried Tomato Basil Pasta Seasoning
- Salt and Pepper
The Directions:
- Boil the pasta until it is to your desired tenderness, strain and run under cold water until chilled. Drain well.
- Place the pasta in a large bowl with the spinach and tomatoes and mix together.
- In a small mixing bowl, whisk together the mayonnaise, balsamic dressing, balsamic vinegar, McCormick Sundried Tomato Basil Pasta Seasoning, and salt and pepper to taste.
- Mix in well with the pasta, and serve immediately!
This pasta salad will hold in the fridge for a few days as long as it is sealed well. You may want to add a bit more mayonnaise or salad dressing if the pasta seems dry after being refrigerated.
