Air Fryer Cream Cheese Cakes 3 Ways

Since welcoming a little one into my life, I have wanted to live a much more simple, pure, and healthy lifestyle. Realizing what everything I eat and touch is made of or grown with has been completely eye-opening. So, in an effort to upkeep my new lifestyle, I made my first trip ever to a Whole Foods Market 365 store and I was so amazed. The standards they have in place are unlike any other market or store I have been to. For example, Whole Foods 365 does not allow any artificial preservatives, colors, flavors, sweeteners, or hydrogenated fats in any of the items they carry. This doesn’t even just include food, but every product they have for your home and body. Not only are their foods held to high standards, but they are wholesome, fresh, and great tasting.
Whole Foods Market 365 is an evolution of Whole Foods- still focusing on the same quality products and great customer service with a streamlined shopping experience. It is also an evolution of the 365 Everyday Value product line focusing on quality through a more affordable price point.
Having these standards in place is so important to me and my family. Two of my siblings have severe allergies to artificial colors- especially red 40, so not having to worry about scanning the ingredient labels of every product we buy while shopping is amazing! You never realize how many artificial ingredients there are in your food until you have to avoid it. And knowing what is in your food and how your food has been grown is something you don’t have the privilege of with many other stores.
Even though everything is so fresh and held to such high standards, I was pleasantly surprised to find their food and products were very reasonably priced. Their goal is to make healthy living easier, and a big part of that means providing products at an affordable price and a convenient experience, so more people have access to them. And I can certainly appreciate that. Coming from a family of nine and wanting a large family of my own, you shouldn’t have to take out a loan just to feed your family healthy, quality food.
So of course, with all of this, I have no option but to go crazy purchasing tons of fresh produce, bouquets of flowers, cheese, and even pizza dough and sauces! But what I was most excited about was their fresh fish which I turned into crispy, flavorful homemade cream cheese salmon cakes and cod cakes. Since we have a family member who is trying out the vegetarian lifestyle, I made a delicious veggie cake as well. For these I found beautiful rainbow carrots (which I have never seen before) to add such amazing color.

Cream Cheese Salmon Cakes
Ingredients:
- 8oz Cream Cheese, softened
- 6oz Fresh Salmon, baked and diced
- 1/2 C. Onion, diced
- 1/2 C. Red Pepper, diced
- 1 Egg
- 1 Tbs. Lemon Juice
- 1/2 tsp. Chile Pepper Flakes
- 3 Tbs Flour
- 1/2 C. Panko Breadcrumbs
- Panko Breadcrumbs, for coating
Cream Cheese Cod Cakes
Ingredients:
- 8oz Cream Cheese, softened
- 6oz Fresh Salmon, baked and diced
- 1/2 C. Onion, diced
- 1/2 C. Red Pepper, diced
- 1 Egg
- 1 tsp. Fresh Ginger, grated
- 3 Tbs Flour
- 1/2 C. Panko Breadcrumbs
- Salt/Pepper, to taste
- Panko Breadcrumbs, for coating
Cream Cheese Veggie Cakes
Ingredients:
- 8oz Cream Cheese, softened
- 1 Cup Rainbow Carrots, chopped in food processor
- 1 C. Xucchini, “zoodled” and chopped
- 1/2 C. Onion, diced
- 1/2 C. Red Pepper, diced
- 1 Egg
- 1 Tbs. Pesto
- 3 Tbs Flour
- 1/2 C. Panko Breadcrumbs
- Panko Breadcrumbs, for coating
Directions:
- In a mixing bowl, whisk the cream cheese until it is smooth and fluffy.
- Using a spatula, carefully mix in all other ingredients and combine well.
- Using a 1/4 measuring cup or a large ice cream scoop, place scoops of the cream cheese cake mixture onto greased parchment paper.
- Smooth out the cakes and form little patties.
- Completely cover all of the cakes in Panko Breadcrumbs, carefully lifting each one up to cover the bottoms.
- Place them in the refrigerator for about 45 minutes, or the freezer for 15 minutes to form the cream cheese before air frying them.
- In a single layer, place your cakes in the air fryer. Set to 390 degrees F. and cook for 9-11 minutes depending on how crispy you want them.
- While they are cooking, make the coordinating sauce below!
Blackberry Chile Sauce:
For Salmon Cakes
- 1/2 C. Whole Foods 365 Blackberry Conserve
- 1 Tbs. Lemon Juice
- 1/2 tsp. Red Chile Flakes
Orange Ginger Sauce:
For Cod Cakes
- 1/2 C. Whole Foods 365 Orange Marmalade
- 1 tsp. Fresh Ginger, gated
Basil Pesto Sauce:
For Veggie Cakes
- 1/2 C. Whole Foods 365 Basil Pesto
- 1 Tbs. Olive Oil
- 1 tsp. Fresh Garlic, minced
Directions:
- Heat the first ingredient in a small saucepan over medium low heat until simmering.
- Add in all other ingredients, and serve warm with the coordinating cake.
- Enjoy!
